This Coffee Estate produces 341 tons / 7,500 qqs of raw coffee in 698 Acres / 401 Mzns. Approximately 743 Acres / 427 mzns (275 Acres/ 158 mzns farm 1 + 468 Acres/ 269 mzns farm 2) have been maintained as a private natural reserve considered Matagalpa’s City lungs.
Water will never be an issue since there are about 7 water springs that supply many neighboring communities. INFRASTRUCTURE: The Coffee Estate has 2 pulping machines, 2 diesel generators, warehouses, two workers' Dorms, offices, 2 houses for admin, kitchen, dining area for workers, and bathrooms.
- The Farm also has approximately 12.5 miles / 20kms of internal gravel roads. On the lowest parts of the Estate, there's a gravel deposit from were gravel is grabbed to build the internal roads at no additional cost.

CLIMATE: The Farms location provides the perfect conditions to produce high ground quality coffees: cool temperatures 64.4 – 73.4 F average (18-23 C), perfect rain patterns (2,200 mm/year), clean mountain air, and clean and fresh rainwater.
ELEVATION: The coffee is grown at elevations ranging from 3,610 - 4,593 Feet Above Sea Level (1,100 – 1,400 MASL). It is a well-known fact that the higher the elevation in which coffee is grown, the better the quality. The reason for this is that the coffee ripening process is slower so the bean has more time to fully develop all its characteristics of acidity, body, & aroma.
COFFEE VARIETY: The best quality coffee varieties are planted in the farm -
Caturra, Catuai, Catimore, Marsellesa, and Parainema. These coffee varieties exhibit outstanding cup quality.
This Coffee Estate has its own Nursery to grow production or renew coffee trees by lots.
All these factors help to create a unique and outstanding cup of coffee showing a pronounced acidity, strong body, and sweet aroma, the finest coffee Nicaragua has to offer.
Our high ground coffees are processed using the Wet Method which is considered the process of higher quality and is traded at a higher price level.
Sorting and cleaning are necessary after harvesting the ripe cherries. After sorting and cleaning, the pulp is removed from the cherry. This process is the main difference between dry and wet methods, as the flesh is separated from the fruit before drying. The step is referred to as "pulping".
The pulping is done by machine - the cherries are pressed between fixed and moving surfaces. The flesh and the skin of the fruit remain on one side, the beans still enclosed in their parchment on the other side. The distance of the moving surfaces is constantly adapted so that the beans are not damaged.
Next, the coffee cherry's mucilage is removed through fermentation, and finally, the beans are dried, either in the sunlight or using forced-air drying.
In our case, the coffee beans are sun-dried in a Coffee Mill of our choosing. There are many Coffee Mills in Matagalpa which provide that service.
Electricity runs on both farms, though the wet mills (on both farms) are powered by diesel generators. Both farms have pulping machines, warehouses, coffee workers camp, and workers housing.
IMPORTANT NOTE: Labor in Rural Nicaragua is the cheapest in Central America starting @ $1.00 / hr.
Matagalpa is one of the most mountainous departments in Nicaragua and represents the beginning of the Northern region of the country. Its territory, which is crossed by two mountain ranges called Dariense e Isabellia, features several rivers flows, interesting towns, rural communities, rural tourism facilities, and many natural attractions such as mountains, natural reserves, lakes, and waterfalls. The production of high-quality coffee is common in this region, known for its cold weather.
Surrounded by mountains, the bustling town of Matagalpa is the administrative center of the region. In the pleasant village are comfortable hotels, good restaurants, museums, cultural centers, and bars. Nearby is the waterfall of the Rio Santa Emilia and Apante Hill nature reserve, where you can hike.
